Ingredients: 2 filet mignon steaks. 2 tbsp olive oil. 1 tbsp Mexican seasoning blend. Salt and pepper to taste. 1 cup red wine preferably Merlot. 1/4 cup balsamic vinegar. 2 cloves garlic, minced. 1/2 cup beef broth. 1 tbsp butter. Fresh cilantro for garnish.
Instructions: Preheat oven to 400F 200C. Rub filet mignon steaks with olive oil and Mexican seasoning blend. Season with salt and pepper. Heat a skillet over medium-high heat. Sear steaks for 2 minutes on each side. Transfer steaks to a baking dish and roast in the preheated oven for 8-10 minutes, or until desired level of doneness. In the same skillet, add red wine, balsamic vinegar, minced garlic, and beef broth. Bring to a simmer and cook until reduced by half, about 5 minutes. Remove skillet from heat and stir in butter until melted and sauce is glossy. Serve filet mignon topped with the red wine reduction sauce. Garnish with fresh cilantro. Pair with a glass of Merlot to complement the rich flavors of the steak and the savory sauce.
