Ingredients: 1 cup of vegan dark chocolate chips. 1/2 cup of full-fat coconut milk. 2 tablespoons of maple syrup. 1 teaspoon of vanilla extract. 1/4 cup of cocoa powder for coating. Optional toppings: crushed nuts, shredded coconut, or cocoa nibs.
Instructions: Put the full-fat coconut milk and vegan dark chocolate chips in a microwave-safe bowl. Microwave the mixture for 20 seconds at a time, stirring after every 20 to ensure that the chocolate melts completely and the mixture becomes smooth. Mix thoroughly after adding the vanilla extract and maple syrup. Once the mixture is firm enough to handle, cover the bowl and place it in the refrigerator for at least two hours. After the mixture cools, take small portions and roll them into bite-sized truffle balls using a spoon or melon baller. Roll each truffle ball in the optional coatings cocoa powder, for example until it is evenly coated in a shallow dish. Transfer the coated truffles to a tray or plate lined with parchment. To set, refrigerate the truffles for an additional thirty minutes. The vegan chocolate truffles can be served room temperature or chilled. Savor your homemade chocolate truffles that are vegan!
