Portabello Mushroom and Eggplant Stir-Fry Here is an interesting dish that I prepared today. It had a combination of portabello mushrooms, 🍆 eggplant 🍆 and peppers along with a nice stir-fry sauce with hoisin sauce, tamari, garlic, ginger and arrowroot powder to help thicken the sauce. At the end of cooking some thinly sliced basil was added as well as Sriracha sauce for some added heat. This stir-fry was added over brown rice and made an easy, healthy, quick meal for my lunch and dinner.
