This tofu scramble is a tasty and filling vegan breakfast option that's full of veggies and protein, making it the ideal way to start the day.
Ingredients: 1 block firm tofu, crumbled. 1 tablespoon olive oil. 1 small onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 teaspoon turmeric. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons nutritional yeast. 2 tablespoons soy sauce or tamari. 1 cup spinach, chopped. Optional: chopped tomatoes, avocado, or vegan cheese for serving.
Instructions: Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and minced garlic. Saut until softened, about 5 minutes. Add crumbled tofu to the skillet, along with turmeric, paprika, salt, and pepper. Stir well to combine. Cook for another 5-7 minutes, stirring occasionally, until tofu is heated through and slightly golden. Stir in nutritional yeast and soy sauce or tamari until well combined. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Taste and adjust seasoning if necessary. Serve hot with optional toppings like chopped tomatoes, avocado, or vegan cheese.
