This tofu scramble is a tasty and filling vegan breakfast option that's full of veggies and protein, making it the ideal way to start the day.
Ingredients: 1 block firm tofu, crumbled. 1 tablespoon olive oil. 1 small onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 teaspoon turmeric. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons nutritional yeast. 2 tablespoons soy sauce or tamari. 1 cup spinach, chopped. Optional: chopped tomatoes, avocado, or vegan cheese for serving.
Instructions: Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and minced garlic. Saut until softened, about 5 minutes. Add crumbled tofu to the skillet, along with turmeric, paprika, salt, and pepper. Stir well to combine. Cook for another 5-7 minutes, stirring occasionally, until tofu is heated through and slightly golden. Stir in nutritional yeast and soy sauce or tamari until well combined. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Taste and adjust seasoning if necessary. Serve hot with optional toppings like chopped tomatoes, avocado, or vegan cheese. Cooked rice, for serving.
Instructions: In a bowl, mix soy sauce, sesame oil, and cornstarch. Add cubed tofu and marinate for 15 minutes. Heat vegetable oil in a skillet over medium-high heat. Add marinated tofu and cook until golden brown on all sides. Remove tofu from skillet and set aside. In the same skillet, add garlic and ginger. Saut until fragrant, about 1 minute. Add bell pepper, broccoli, and carrot to the skillet. Stir-fry until vegetables are tender-crisp. Return tofu to the skillet and add green onions. Cook for an additional 2 minutes. Serve hot over cooked rice. Enjoy your flavorful tofu stir-fry!

🗣Happy #MealPrepSunday !!!! Thanksgiving Break was fun while it lasted but now it’s time to get back on to it 👌😎👍 for lunch this week we got some baked (rosemary, white wine and lemon marinated) chicken breast with some @minutericeus rice and quinoa (added a small splash of @pompeian grape seed to the water before boiling) some @delmonte #veggieful spinach and feta bites. They are made with a cauliflower crust so I’m super excited about that 🤗😋 and some @dolesunshine @dolepics fridge pack pineapple tidbits 🙌 🙌 🙌 🙌 of course we got some more lucy red apples from @lowesfoods in case I am looking for an extra added snack 👌😉 small workout done even got some 2 on dumbbells (not shown here).
