Ingredients: 2 cups all-purpose flour. 1/2 cup vegan butter, softened. 1/2 cup granulated sugar. 1/4 cup almond milk. 1 tsp vanilla extract. 1/4 tsp salt. 1 cup powdered sugar. 4 oz vegan cream cheese, softened. 1/4 cup vegan butter, softened. 1/2 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, cream together vegan butter and granulated sugar until light and fluffy. Add almond milk and vanilla extract, mix until well combined. Gradually add flour and salt, mixing until a dough forms. Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to cut out shapes. Place cookies onto the prepared baking sheet and bake for 8-10 minutes, or until edges are lightly golden. Allow cookies to cool completely on a wire rack before frosting. For the frosting, beat together powdered sugar, vegan cream cheese, vegan butter, and vanilla extract until smooth and creamy. Spread frosting over cooled cookies and decorate as desired.
