Butternut Bliss Bites These delightful cookies bring together the richness of butterscotch and the crunch of pecans, topped with a luscious rum glaze for a festive treat. Ingredients 3/4 c butter, room temperature + 1 Tbsp 1/2 c powdered sugar 1/4 tsp salt 1 3/4 c all-purpose flour 1 pkg butterscotch chips, 6 oz. 1 c finely chopped pecans RUM GLAZE 3 c powdered sugar 3 to 4 Tbsp milk or water 1 tsp rum extract TOPPING 1/2 c chopped pecans Instructions Cream the butter with the powdered sugar and salt until the mixture is light and fluffy. Blend in the flour and mix well. Incorporate the butterscotch chips and finely chopped pecans, mixing thoroughly by hand. Shape the dough into balls using a scant teaspoonful at a time, placing them 1 inch apart on an ungreased cookie sheet. Bake in a preheated 325°F oven for 15 to 20 minutes or until the cookies are firm but not browned. Allow them to cool on wire racks. Prepare the rum glaze by mixing the powdered sugar, rum extract, and milk until smooth. You can either dip the cookies in the glaze or use a spoon to drizzle it over the tops. Finish by sprinkling the chopped pecans on top and let the glaze set.
