Ingredients: 3 cups granulated sugar. 1 1/4 cups cold water, divided. 3 tablespoons unflavored gelatin. 1/4 cup cornstarch. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Red and green food coloring. Edible markers black, red, blue.
Instructions: In a mixing bowl, combine 1 1/4 cups of cold water and the gelatin. Let it sit for 10 minutes to bloom. In a medium saucepan, combine the granulated sugar with 1 3/4 cups of water. Heat over medium-high heat, stirring until the sugar dissolves. Bring the mixture to a boil without stirring. Use a candy thermometer to ensure it reaches 240F 115C. Once the sugar syrup reaches the correct temperature, remove it from heat and carefully pour it into the gelatin mixture. Stir until the gelatin dissolves completely. Add the vanilla extract and a pinch of salt to the mixture. Stir well. Divide the marshmallow mixture into two equal portions in separate bowls. Add red food coloring to one bowl and green food coloring to the other. Mix until you achieve your desired colors. Pour the colored marshmallow mixtures into separate greased and powdered sugar-coated square or rectangular pans. Smooth the tops with a spatula. Let the marshmallows set for at least 4 hours, or overnight, until they become firm and no longer sticky. Once the marshmallows have set, remove them from the pans and place them on a cutting board dusted with a mixture of cornstarch and powdered sugar. Cut them into reindeer and other Christmas-themed shapes using cookie cutters. Use edible markers to decorate the marshmallow shapes to resemble Rudolph and the other reindeer from Santa's sleigh. Add eyes, noses, antlers, and any other details. Allow the edible markers to dry before serving your Rudolph and the Gang Marshmallows.
