This Thai Green Curry with Shrimp is a quick and healthy dinner idea for the middle of the week that is full of bright flavors. This dish is satisfying because it has crunchy vegetables, juicy shrimp, and a fragrant green curry sauce.
Ingredients: 1 lb shrimp, peeled and deveined. 2 tbsp green curry paste. 1 can 14 oz coconut milk. 1 cup chicken or vegetable broth. 1 red bell pepper, sliced. 1 cup sliced mushrooms. 1 cup snap peas. 1 tbsp fish sauce. 1 tbsp brown sugar. 1 tbsp lime juice. 1 handful fresh basil leaves. Cooked rice, for serving.
Instructions: Put 1 tablespoon of oil in a large skillet or wok and heat it over medium-high heat. After you add the green curry paste, stir the food around constantly for one minute. Add the coconut milk and broth and mix them together by stirring. Bunch of snap peas, bell pepper, and shrimp should be added. Set the sauce on low heat and cook for 5 to 7 minutes, until the shrimp is pink and fully cooked. Add the lime juice, brown sugar, and fish sauce, and mix well. Check the seasoning and make changes if needed. Take it off the heat and add the fresh basil leaves. Put the Thai green curry on top of rice that has already been cooked. Have fun!
