This Healthy Vegetable Frittata is a tasty and healthy way to have a breakfast or brunch full of protein. This dish is easy to make and full of healthy vegetables and cheese, which you can choose to add.
Ingredients: 6 large eggs. 1/2 cup diced bell peppers. 1/2 cup diced onions. 1/2 cup diced zucchini. 1/2 cup diced tomatoes. 1/4 cup chopped spinach. 1/4 cup shredded cheese optional. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Start by heating the oven to 350F 175C. Turn on the oven and heat the olive oil in a large skillet that can go in the oven. Put the zucchini, bell peppers, and onions that have been cut up into the pan. Saut them for about three to four minutes, or until they start to get soft. Add the spinach and tomato dices and mix well. Add two more minutes of cooking. Add the eggs to a bowl and whisk them together. Add salt and pepper to taste. Spread the egg mix out evenly over the vegetables that have been cooking in the skillet. If you want, you can top it with shredded cheese. Place the skillet in an oven that has already been heated and bake the frittata for 15 to 20 minutes, or until the top is set and slightly golden. Take it out of the oven and let it cool down for a few minutes before cutting it. To make a healthy meal, serve your vegetable frittata with a salad or fresh fruit.
