Gemüse-Reis-Pfanne mit Veggie Bällchen
Wie steht ihr eigentlich zu all den vegetarischen Fleisch-Alternativen, die es derzeit so im Supermarkt zu kaufen gibt? Mittlerweile ist die Auswahl ja wirklich riesig - ob es vegetarische “Fleischwurst”, “Salami” oder “Schnitzel” sind. Ich muss ja zugeben, dass ich mich wirklich gerne durch das ganze Sortiment und alle Hersteller durchprobiere. Sicherlich kann man sich darüber streiten, ob vegetarische Produkte äußerlich den Fleischprodukten 1:1 gleichen müssen, oder ob man Veggie-Produkten Fleisch-Bezeichnungen geben sollte. Ich persönlich finde es jedoch toll, dass man heutzutage eine solch große Auswahl an Ersatzprodukten im Supermarkt vorfinden kann. Das macht es kinderleicht, auf Fleisch zu verzichten und viele der Produkte überzeugen mich auch geschmacklich auf ganzer Linie.
Ein Produkt, dass ich mir immer wieder kaufe, sind die vegetarischen Gemüsebällchen. Ich glaube, ich habe hier schon wirklich jeden Hersteller ausprobiert und finde alle Produkte echt gut, ob vom Discounter oder von großen namenhaften Herstellern. Wenn es mal wieder schnell gehen muss, sind die Veggie-Bällchen einfach perfekt geeignet und lassen sich problemlos in schnelle Gerichte integrieren. So zum Beispiel auch im meine vegetarische Gemüse-Reis-Pfanne. Diese bereite ich mir sehr gerne zu, wenn ich nicht viel Zeit habe, um in der Küche zu stehen und ich mich dennoch gesund und nährstoffreich ernähren möchte.
SWEET POTATO BLACK BEAN VEGGIE BALLS
32 balls | 75 minutes
Ingredients
1 lb sweet potato
1 can black beans
3/4 cup KA Measure for Measure GF flour
1/2 tsp salt
1/2 tsp roasted garlic powder
1/2 tsp chili powder
1/4 tsp smoked paprika
1/4 tsp onion powder
1/4 tsp black pepper
1/4 tsp oregano
1/4 tsp basil
1/8 tsp ground cumin
4 tbsp vegan butter
Directions
Set a pot of salted water to boil. While water is heating, peel and dice sweet potato. Microwave for 8 1/2 minutes or until mashable. While sweet potato is cooking, open the can of black beans. Rinse and drain. Mash black beans until smooth with a fork. Prepare mix of herbs and spices. Sweet potato should be done and ready to be mashed with a fork. Mash until smooth. Toss in herbs and spices and mix thoroughly into the sweet potato. Move sweet potato mixture to a mixing bowl. Heat mashed black beans in microwave for 1 minute. Mix into sweet potato until incorporated while warm. Add in 3/4 cup KA Measure for Measure GF flour and mix until well incorporated while warm. Mixture may seem dry and flaky at first, but when workably warm, knead until the flour hydrates into the sweet potato black bean mixture.
Cut ball into four. Roll each quarter into a log. Cut log into 8 pieces and roll each piece into a ball. Lower 16 balls into the boiling water. Heat a pan with 2 tbsp butter as the balls boil. When the balls float, they are ready to be transferred to the pan with the butter. Heat until brown on two or three sides of the ball. Repeat with the remaining 16 balls. Serve with a vinegary hot sauce.
Notes
1. By changing the spice mixture or the beans, you can get a variety of flavors.
2. You can freeze these. Just let them cool and package them away in a ziplock bag.
3. Just use regular garlic powder if you can't find roasted.
4. It's involved, but the cooking goes fast because you're very active.
