Ingredients: 4 boneless, skinless chicken breasts. 1 packet ranch seasoning mix. 1 cup chicken broth. 1 cup salsa. 1/2 cup diced onion. 1/2 cup diced bell pepper. 8 taco-sized flour tortillas. Optional toppings: shredded cheese, diced tomatoes, sour cream, avocado slices, lettuce.
Instructions: Place chicken breasts in the slow cooker. In a bowl, mix together ranch seasoning mix, chicken broth, and salsa. Pour over chicken. Add diced onion and bell pepper on top of the chicken. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender and cooked through.
