Ingredients: 1 block extra firm tofu, pressed and crumbled. 1 tablespoon olive oil. 1/2 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 teaspoon turmeric. 1/2 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 8 small tortillas. Optional toppings: avocado, salsa, vegan cheese, cilantro.

Ingredients: 1 block firm tofu, pressed and drained. 1/2 cup cooked quinoa. 1/4 cup breadcrumbs. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Set oven temperature to 400F 200C. Cut the pressed tofu into pieces that resemble nuggets. Cooked quinoa, breadcrumbs, paprika, onion, and garlic powder, salt, and pepper should all be combined in a shallow bowl. Dredge each tofu nugget in the quinoa mixture and gently press to cling. Ingredients: 400g firm tofu, pressed and sliced into thin strips. 4 tablespoons olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon paprika. 1 teaspoon turmeric. 1/2 teaspoon ground coriander. 1/2 teaspoon ground cinnamon. Salt and pepper to taste. 4 pita bread rounds. 1 cup shredded lettuce. 1 tomato, diced. 1/2 cucumber, sliced. Vegan tzatziki sauce optional, for serving.
Instructions: In a small bowl, whisk together olive oil, lemon juice, minced garlic, cumin, paprika, turmeric, coriander, cinnamon, salt, and pepper. Place tofu slices in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes, or overnight for best flavor. Preheat oven to 200C 400F. Transfer tofu cutlets onto a lined baking sheet, reserving excess marinade. Bake tofu for 25-30 minutes, flipping halfway through and basting with reserved marinade. Serve hot and enjoy!
