This Venison Tuscan Soup is a hearty and healthy meal that combines the rich flavors of wild game with vegetables and seasonings from Tuscany.
Ingredients: 1 lb venison, diced. 2 tbsp olive oil. 1 onion, diced. 3 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 can diced tomatoes. 4 cups beef broth. 1 cup kale, chopped. 1 tbsp Italian seasoning. Salt and pepper to taste. Grated Parmesan cheese for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the deer meat and brown it all over. Put in the celery, carrots, onion, and garlic. Make sure the vegetables are soft. Add the beef broth, Italian seasoning, and diced tomatoes and mix them in. Let it cook for 20 minutes. After you add the chopped kale, let it cook for another 10 minutes. Add pepper and salt to taste. Grate some Parmesan cheese on top and serve hot.
