Using the leftover Virginia ham which sis diced it up and fried with eggs. Toasted a couple of flat breads and stuffed it with the ham omelette. Here is my Ham & Egg Pita Bread with a couple of slices of pickled daikon for a late lunch.

Bought this traditional brioche loaves to make cheerful Brioche Sandwich with Virginia ham, fried egg, cheese, tomato and picked daikon slices. Love the soft and sweet rich bread which differ from the usual white breads I am more used to. Come to think of it, now that I am in office most of the days, I missed having this type of homemade sandwiches.
Picked up some Pan Pacific Virginia Ham 🍖 and a bag of Sun-Dried Tomato & Herbs Panini Rolls 🍅🌿🥖 from Cold Storage. The next morning, I placed the ham and a slice of cheese 🧀 in the bread roll, wrapped it up in foil and toasted it in the oven for about 15 minutes while I made myself a cup of black tea ☕️ with a sachet of ginger powder. Removed the hot sandwich 🥪 from the oven and added a few slices of the pickled daikon (Danmuji). Don’t mind me as I devoured the Panini Ham Sandwich. 😄
The second ham I gotten for last year Christmas is this 2.5kg Virginia Semi Bone-In Ham (S$47.50). Unfortunately, due to the smaller size, there are more fatty parts than meat so those fatty portions would be utilized when mum stews the dried bamboo shoots for the upcoming Chinese New Year.
Mum bought these soft wholemeal bread from the local bakery so I took three slices to make the Ham & Mushroom Sandwich. Started off with baby rockets, slice of cheese to keep the leaves in place and a ring of pineapple for the bottom layer. Add a slice of bread and then caramelized shiitake mushrooms and pan-fried ham, topping off with another piece of bread. Overall, another hearty lunch though ham is a tad salty, but the tangy sweet pineapple managed to tone down the saltiness.
It is back to my home prepared Panini Ham Sandwich 🍖🥪 for breakfast using store bought ingredients. Nowadays, as most of us are working from home due to the pandemic, one got to stock some ready to eat food items at home for emergencies or plain laziness when you can’t be bothered to go out. 😄
Using the leftover Virginia ham 🍖 from Christmas 🎄, sis pan-fried it then coated the hams in cranberry sauce (included with the ham purchase) to give it some sweetness. I took the toasted bun 🥖 from the oven and layer the cheese 🧀, ham, over easy egg 🍳, picked daikon with a drizzle of honey mustard to make this Ham & Egg Ciabatta Sandwich 🥪 for dinner.
Still feeling hungry, I toasted the pita bread 🫓 halves and stuffed them with the same ingredients minus the pickled daikon as the flat bread were already too fat. Only had one fried egg 🍳 left so the other half without it. Voilà, my Pita Pockets 🥙 is ready for eating. 😋
This 3kg Honeycomb Virginia Baked Ham (S$55) from NTUC is a little drier and tougher compared to the one we had last year. Set aside a small portion for my brother as I promptly sliced up the rest to thick cuts as we like our ham to have a more substantial bite.
Today’s breakfast is east meets west fusion of Ham & Clamshell Bun and Chips. Sis started preparation by frying the omelette, followed by the shiitake mushrooms and then the ham. While I washes and dry the lettuces plus sprayed it with some truffle oil. Now to assemble the freshly steamed buns. A piece of cheese at the base, followed by plenty of lettuces, ham, egg, mushrooms and pickled daikon. To finish off the sandwiches, a drizzle of honey mustard and they are done. I also throw in a handful of Spicy Crayfish Flavoured Chips which complemented the buns rather well.
