A delicious and nutritious Japanese dish, Tofu Wakame Salad combines the refreshing taste of wakame seaweed with the creamy texture of tofu. This is a great side dish or light dinner because of the dressing's tangy, savory, and slightly sweet flavor.
Ingredients: 1 block firm tofu, drained and cubed. 1 cup dried wakame seaweed, rehydrated and drained. 1 small cucumber, thinly sliced. 2 tablespoons rice vinegar. 1 tablespoon soy sauce. 1 teaspoon sesame oil. 1 teaspoon grated ginger. 1 teaspoon honey or maple syrup. 1 tablespoon toasted sesame seeds.
Instructions: To create the dressing, combine the rice vinegar, soy sauce, sesame oil, grated ginger, and honey/maple syrup in a bowl. To the dressing, add sliced cucumber, rehydrated wakame seaweed, and cubed tofu. To coat, gently toss. Before serving, top the salad with toasted sesame seeds.
