O-inari-san ~ The origin of Inari Sushi [Spin Off]
When we say "O-Inari-san", what comes to mind is the delicious Inari Sushi. Of course, as this food is associated with the god Inari, Ukanomitama-no-kami, we will introduce it as an extra.
This sushi is made by opening a bag of deep-fried tofu, boiling it in sweet or spicy sauce, and filling it with sushi rice, either as it is or with ingredients such as carrots and shiitake mushrooms that have been cooked and mixed together.
The god Inari of Inari shrines (Ukanomikatama, the god of the five grains) is the god of prosperity and good harvests, leading to the bale shaped Inari Sushi. In the eastern Japan inari-sushi is generally made in the shape of a bale (rectangular, almost cylindrical). Besides, in the western Japan, they are made into triangles, and each region of Japan has its own way of making them.
Originally, the Inari god was not a fox, but during the Edo period (1603-1868), popular belief led some to believe that he was. It is said that the name "Inari Sushi" came from the legend that the favorite food of the fox, the messenger of the Inari god, is deep-fried tofu.
Depending on the region, it is also called " fox-sushi " or " kon-kon-sushi " from the onomatopoeic sound of a fox's cry.

「お稲荷さん」と言えば、思い浮かぶのは美味しい稲荷寿司ですね。もちろん、稲荷神・宇迦之御魂神(うかのみたまのかみ)に纏わる食べ物なので、番外編としてご紹介します。
袋状に開いた油揚げを甘くあるいは甘辛く煮付け、寿司飯をそのまま、あるいはニンジンやシイタケなどの具材を煮込んで混ぜた寿司飯を詰めるお寿司です。
稲荷神社の稲荷神(五穀を司る宇迦之御魂神、うかのみたま)は商売繁盛と共に豊作の神様であり、俵型の稲荷寿司につながります。東日本では、一般的には米俵を模した俵型(円筒に近い直方体)に仕上げますが、西日本では、三角形に仕上げるものなど、日本各地、それぞれの地域によって作り方は異なります。
本来、稲荷神は狐ではありませんが、江戸時代には俗信により同化とみなす向きがあったため、稲荷神の神使である狐の好物が油揚げであるという言い伝えから、「稲荷寿司」の名がついたともされています。
地方によっては「きつね寿司」や、狐の鳴き声の擬音語から「こんこん寿司」などとも呼ばれるそうです。
