Much like Drifter or Outcast, the term 'witch' is truthfully really used as a societal label on Dridon. But it does have different meanings to the different beliefs.
Witches in Abyssalism
To Abyssalists, a Witch is very much a thing to be wary of. Witches are people who have mastered the full realm of potion-making and alchemy, and use it for their own often malevolent purposes. Witches are those who have treaded further into The Great Abyss' domain than is acceptable--they have dipped into the art of transformation, turning simple water into potions that can give various effects, both good and bad.
Traditionally the term of Witch is used for people who both create potions and use them. But it has transferred into a type of slang-term as well, and is also used for opponents who are using potions to bless themselves or curse others in the battle.
Witches aren't as widespread as one might think, as the ingredients, and knowledge of them, for different potions, alongside the process to make other potions, is scattered throughout the Biomes. For instance, Fire Resistance potions are primarily made and found in the Scorched Lands such as the Desert and Mesa Biomes. Water Breathing potions are found and made primarily in The Pure Woods. There are even rumors of a potion from The Dark Forest, that allows one to see in the dark as if it were day. Witches have various ways of getting all ingredients needed for all fourteen potion types, usually from Wanderers or rare underground markets.
Of course, despite the disdain Abyssalists hold for Witches, they remain hypocritical in the fact they still buy potions from them for later use.
Witches in Idealism
Witches in Idealism are held in a more positive light. They still are masters of the ins and outs of alchemy, but mostoften they are also teachers, and followers of the Paradigm of Power.
Some Idealists are still admittedly wary of some Witches, as some tend to go off the rails, or lock themselves in isolation (also earning the societal label of Outcast) in order to further their studies. Witches often revere the Paradigm of Power, especially if they're Idealist, as in Idealism Power is believed to be the source of both potions' magical abilities, as well as the major patron of enchantment magic.
There is a highly dangerous, but highly sought rite of passage for Idealist Witches, wherein they try to survive the Paradigm of Power's most dangerous associate: stormbursts. It is believed for some that stormbursts hold great magical power, and surviving one will grant you more knowledge in Power's realm. Unfortunately, most Witches end up dying to the stormbursts, most often lightning strikes from thunderbursts (thunderstorm stormbursts.)
Overall
Overall, Witches take much pride in their accomplishments, and thus are a rather performative bunch for the most part. Dramatic and theatrical, they'll jump at the chance to show off their potions or sell them for hefty prices. They enjoy scaring off or even killing people who show up to their homes to threaten them, or are even just rude.
Witches also often get along with Wanderers, shifty traveling merchants who are usually also able to cross stormbursts. Witches hassle the Wanderers for their supposed magic knowledge (if the Witch is Idealist and holds that belief), but usually the Wanderer calls them crazy or leads them on and makes them pay for bits of information that are nost likely made up.

I was reading your villager/illager headcanons and if the villagers worship Reader would the illagers worship Techno?
I also imagine wandering traders having been to her village and having gone and told other villages about it, so now other villages may have started worshipping this new deity so their home could be as nice as the one they've heard about.
I don't think they'd worship him, but word of him has definitely spread through the Pillager communities. He's regarded as a danger to them (techno is no stranger to looting and then burning down pillager mansions....) instead of someone to be worshipped.
But yeah Reader is kind to all wandering traders who visit her village. She offers them trades and even somewhere to rest as well as some food so they can recharge before they're off again. So yeah, they definitely mention her in villages they go to afterwards. And with villagers being huge gossips it's no shock word of her spread.

They shall no longer starve in their travels
