A classic and hearty beef stew cooked low and slow in a crock pot, resulting in tender meat and flavorful vegetables.
Ingredients: 2 lbs beef stew meat. 4 potatoes, diced. 4 carrots, sliced. 1 onion, diced. 2 cups beef broth. 2 cloves garlic, minced. 1 tsp salt. 1/2 tsp black pepper. 1 tsp dried thyme. 1 bay leaf.
Instructions: Put the onion, garlic, potatoes, carrots, beef, and potatoes in the slow cooker. Add the beef broth and mix it in. Add bay leaf, salt, pepper, and thyme to taste. Put the lid on top and cook on low for 8 hours or high for 4 hours, until the meat and vegetables are soft.
