Ingredients: 1 cup red lentils. 4 cups vegetable broth. 1 onion, diced. 2 carrots, sliced. 2 celery stalks, chopped. 1 bell pepper, diced. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: Rinse red lentils under cold water and set aside. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, celery, bell pepper, and garlic.
