Reading Simon's conversation with Agathas dad at the start of Any Way the Wind Blows just has me like

"Oh... oh, Simon honey... no. That's not... oh baby boy."

Because he GENUINELY doesn't see anything wrong with the way the Mage treated him. He doesn't consider himself as having been a child or realized that being a weapon for someone is NOT A GOOD THING

To him the ONLY bad thing the Mage did was team up with vampires and that's part of why he has such a visceral reaction to the whole situation with Lamb in Wayward Son.

In Wayward Son after Lamb agrees to help them and Simon is just losing his shit

Its not just him being jealous. It's a trauma response for 2 reasons

First of all: Lamb is an authority figure. He's the king of the vampires, and he's telling Simon and his friends to go and kill an enemy.

This is exactly what the Mage did for years. He would tell Simon to go kill something and he would do it. But then the Mage turned out to be bad after Simon had done all of these things for him without question. So of course this is going to set off his issues trusting authority severely

Second point: the Mage negotiated and made deals with vampires. In Simon's mind that is the reason the Mage is bad. Because he worked with vampires and vampires are all evil and bad. They have to be bad because that was the reason the Mage was bad and if they aren't all like that then it makes things more complex. Simon needs to see vampires in black and white so he can firmly categorize the Mage as a "Bad guy" for associating with them and leave it there without having to think about it more. And if the Mage was a bad guy that justifies what happened and what Simon did

Simon isn't just jealous of a pretty man flirting with Baz. He is unraveling and freaking out because it's a trauma response and the Cognitive Dissonance is not compatible with how he's coping
