Rips on my Aquata last night.
Simple Weeknight Corn/Cauliflower Tacos
(Vegetarian meal that comfortably serves 2 with leftover filling)
ingredients
-tortillas
-1 can of corn
-1 small onion
-1/2 a head of cauliflower
-spices (of your choice)
-kale
-butter/olive oil
garnish
-sour cream
-cilantro
-lime
-avocado
-(optional: pickled dilly green beans; or pickled veggies).
Steps
1. Preheat oven to 425F. cut up the cauliflower and onion into small pieces and put them on a cookie sheet. Add the can of corn (drained). Spice them (Chili powder, Cayenne, Spiced Paprika, Salt and Pepper, and others). When the oven is at temp, roast them for 20 min.
2. while the cauliflower is cooking, cut up the kale into small sections (remove central stems) & sautée with butter and garlic until slightly wilted but not totally (so they still have a bit of crunch).
3. warm your tortillas and serve together with garnishes.

I grew up in a mostly vegetarian household and there wasn’t anything particularly unique about our household. Most of punjabi cooking is essentially vegetarian and meat cooked only at weddings and feasts.

Day 325.
Choose a week night to treat as weekend.
Step one, choose night. Step two, stop grunting noises of sad anticipation towards workday ahead. Step three, avoid self-inflicted yawns. Step four, check times of interesting films. Step five, invite friend (optional). Step six, have dinner close to theatre location. Step seven, watch film. Step eight, open bottle of wine (replaceable with beer, vodka or whiskey). Step eight, talk drunken topics over with friend or sing upbeat songs aloud. Step nine, drink as much water as possible. Step ten, take some sleep and go to work the next day feeling tired, but motivated.

Tues: French onion soup (without cheese or bread) Humongous salad &&& Vanilla Greek yogurt with blueberries and blackberries for dessert

Both nights have been really good. The turkey burgers were boss!
