Ingredients: 3 pounds russet potatoes, peeled and cubed 1 cup heavy cream 1/2 cup unsalted butter 1 teaspoon salt 1/2 teaspoon black pepper 1/4 cup sour cream (optional) Chives for garnish (optional) Instructions: Place the cubed potatoes in a large pot and cover with cold water. Add salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain well. In the same pot, add the butter and heavy cream. Heat over low until the butter melts.
