Ingredients: 1 cup dried white beans, rinsed and soaked overnight. 1 onion, chopped. 2 carrots, chopped. 2 celery stalks, chopped. 3 cloves garlic, minced. 4 cups vegetable broth. 1 can 14 oz diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 2 cups chopped kale or spinach. 2 tablespoons olive oil.
Instructions: Put white beans that have been soaked, onion, carrots, celery, garlic, vegetable broth, diced tomatoes, thyme, rosemary, salt, and pepper in a slow cooker. For 6 to 8 hours, or until the beans are soft, cover and cook on low heat. Add chopped kale or spinach and olive oil in the last 30 minutes of cooking. Check the seasoning and make changes if needed. Enjoy while hot!
