Kevin plating our lunch on a break from cutting and wrapping my buck neck and front end. Many benefits of cutting in stages. Neck and shoulders are braised for the most part. There are two exceptions in the shoulders, and they’re killer cuts! But generally speaking these primals benefit little from additional ageing. Hinds and loins can sit in the cellar for another couple weeks. Another bonus is that it isn’t a marathon as Kevin puts it. My lunch today was amazeballs. Fresh whole wheat bread, mustard, mayonnaise, tomato…and bear ham! @jeff_senger turned some of my bear into the most amazing ham ever. Moist, tender and smoky. Snowshoe Hares are very tasty table fare. One or two for the freezer, and the braising pot. We saw many dozens in our travels while hunting bears over the past 2 weeks in Alberta’s boreal forest. Small game hunting, at least here in Alberta seems to be severely undervalued. We have hares and rabbits in great numbers, without seasons. Definitely worth considering for shoulder season, or at least by-catch harvest opportunities. Photo by John Schneider.
