CabSav Cranberry Jam
you need:
2lbs of ripe cranberries
2 cups of Cabernet Sauvignon or other favorite wine
2 cups of water
4 cups of sugar
2 tablespoons of lemon juice
1 pack of pectin
Bring water canner half full of water to a boil then simmer. Wash jars and screw bands in hot soapy water rinse with warm water. Pour boiling water over the flat lids in a saucepan off heat. Let stand in hot water until ready to use. Drain the jars before filling.
Place the cranberries, water and wine in a large saucepan. Bring to boil. Reduce heat to low, cover and simmer for 10 min. Smash up with potato smasher until all berries have burst.
Stir in sugar into the large saucepan. Bring it up to a full rolling boil on high heat, stirring constantly. Stir in lemon juice and pectin. Return to a full rolling boil and boil for exactly 1 minute no more. Skim the foam with a metal spoon.
Ladle ito prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads cover with the flat lid, the screws the band on fairly tight. Then process the jars in canner for 10 minutes (make sure the water is boiling and covers the jars by 2 inches). Remove jares and place upright on a towl to cool completely. When jars have cooled check seals and if they don't seal the refrigerate the can.
