The batter is thin but crunchy, chicken is perfectly seasoned, and what makes these fried wings even more exciting to eat is that they are tossed in a tangy fish sauce - honestly what a genius idea. So here’s the recipe: Ingredients: 1kg Chicken wings 5-6 cloves of garlic minced Marinade: 1 tbsp fish sauce 1 tsp chicken powder 2 tsp garlic powder 1/2 tsp pepper 1 tsp ginger (minced) The fish sauce: 2 tbsp fish sauce 1 lime 4 tsp sugar A hand full of chopped coriander 1 red chillie chopped Batter for the chicken: 3/4 cup corn flour 1/2 tsp baking powder Method: 1. Combine wings with marinade ingredients and marinate it for 1 hour in the refrigerator. 2. In a shallow pan using low heat, add in 2-3 tbsp oil. Fry the minced garlic until golden brown. Set aside. 3. To make the fish sauce, add in the sugar and fish sauce to a small pot. Simmer on low heat until sugar dissolves. Let it cool down then squeeze the lime in. Set aside. 4. Take the wings out from fridge and coat with batter ingredients in a bowl. 5. Heat a large pot/wok with a generous amount of oil. Fry the wings on medium heat for about 6 minutes. Remove from oil and set aside for a few minutes and double fry it. 6. Turn the heat up to high and re-fry the wings for the extra crunch. Fry until it turns golden (another 6 minutes or so). 7. You can now combine the coriander and the minced fry garlic into the fish sauce. Mix the chicken wings into the sauce and ready to serve.
