What are you doing with your abundance of Zucchini this year! I love Zucchini and when I open my door to gifted ones too! This is what I’m trying this year with some of the extras. I’ll keep ya posted.... How to dehydrate and make Zoodles (Zucchini Pasta Noodles) Cut in to half inch or so strips ( think fettuccine) don’t make to thin! Place the cut zoodles on dehydrator racks. Dry at 115 degrees until completely dried. I did mine overnight in my Excalibur dehydrator. Approximately 12 hours. Let cool on the racks and store. I place mine in very clean and dry half-gallon canning jars and vacuum seal the jar with my vacuum sealer. You want to get the oxygen out. Do not store at room temperature without removing the oxygen could cause Zoodles to mold and/ or grow bacteria! Seriously.
