Ingredients: 2 large yucca roots, peeled and cut into fries. 2 tablespoons olive oil. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 cup mayonnaise. 2 tablespoons Dijon mustard. 1 teaspoon curry powder. 1 tablespoon honey. 1 tablespoon lemon juice.
Instructions: Get your air fryer ready by heating it up to 380F 190C. Add the yucca fries to a large bowl and mix in the garlic powder, salt, black pepper, olive oil, and pepper. Make sure the fries are well covered. Season the yucca fries and lay them out in a single layer in the air fryer basket. Shake the basket every so often during the 1820 minutes of air fry time, or until the fries are golden brown and crispy. Do the creamy curry mustard sauce while the fries are cooking. In a bowl, mix the mayonnaise, Dijon mustard, curry powder, honey, and lemon juice. You can dip the hot yucca fries in the creamy curry mustard sauce that you serve with them.
