With a buttery crust, this delicious tart has the sweet and sour taste of fresh blackberries and the soft floral notes of lavender. You can make this dessert for any event, like a dinner party or just because you want something sweet.
Ingredients: 1 1/2 cups fresh blackberries. 2 teaspoons dried culinary lavender. 1 cup all-purpose flour. 1/2 cup unsalted butter, cold and diced. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1 egg yolk. 2 tablespoons ice water. 1/2 cup blackberry jam. 1 tablespoon lemon juice. 1 tablespoon cornstarch. Powdered sugar, for dusting.
Instructions: Preheat oven to 375F 190C. In a food processor, pulse together flour, sugar, salt, and dried lavender until combined. Add cold butter and pulse until mixture resembles coarse crumbs. Add egg yolk and ice water, and pulse until dough comes together. Wrap dough in plastic wrap and chill in the refrigerator for 30 minutes. Roll out dough on a floured surface and transfer to a tart pan, pressing it into the bottom and up the sides. In a small saucepan, heat blackberry jam, lemon juice, and cornstarch over medium heat until thickened, about 3-4 minutes. Spread jam mixture evenly over the tart crust. Arrange fresh blackberries on top of the jam mixture. Bake for 25-30 minutes, or until crust is golden brown. Allow tart to cool completely before serving. Dust with powdered sugar before serving.
