These chocolate dipped banana cream pops are a delightful combination of creamy banana goodness and rich chocolate. Perfect for a refreshing treat on a hot day!
Ingredients: 3 ripe bananas, peeled and chopped. 1 cup heavy cream. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. 1 cup semisweet chocolate chips. 2 tablespoons coconut oil. Popsicle sticks.
Instructions: In a blender, combine chopped bananas, heavy cream, powdered sugar, and vanilla extract. Blend until smooth. Pour the mixture into popsicle molds, insert popsicle sticks, and freeze until solid, about 4-6 hours or overnight. Once the popsicles are frozen, prepare the chocolate dip. In a microwave-safe bowl, combine semisweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth. Remove the popsicles from the molds and dip each one into the melted chocolate mixture, allowing any excess chocolate to drip off. Place the dipped popsicles on a parchment-lined baking sheet and return them to the freezer to set the chocolate, about 15-20 minutes. Once the chocolate coating is firm, serve and enjoy!
