Ingredients: 4 large russet potatoes, peeled and cut into chunks. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon dried rosemary. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Preheat the oven to 425F 220C. In a large bowl, toss the potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 35-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside. Serve hot and enjoy!
