Ingredients 2 large eggs 2 3/4 cups whole milk ½ stick melted unsalted butter 1 teaspoon vanilla extract 3 cups all-purpose flour 3 tablespoons sugar 1 tablespoon baking powder ¼ teaspoon salt Oil for frying Powdered sugar for garnish Instructions Add 4 to 6 cups of oil to a medium to large size saucepot over medium-low heat until it reaches and holds at 375° Fahrenheit. In a large bowl, combine the eggs, milk, melted butter, and vanilla and whisk until fully blended. Set aside. In a separate medium bowl, whisk together the flour, baking powder, and salt until evenly mixed. Gradually add the flour mixture to the wet ingredients in three batches, vigorously whisking until smooth before adding the next batch. Once the batter is smooth, transfer it to a large squeeze bottle with a wide opening. Alternatively, use a water pitcher to pour the batter through a funnel directly into the hot oil. In a zig-zag circular motion, squeeze about ¾ cup of batter into the oil, overlapping the strands to form a large circle. Cook for 90 seconds or until lightly browned, then flip and cook for an additional 30 seconds. Remove the funnel cake from the oil and drain on a paper towel. Dust with powdered sugar and serve warm.

To make the dough double in size, cover it and let it rise for one to two hours. Warm up your waffle iron. Cut the dough into little pieces and roll each one into a ball.
