Ingredients: 4 large russet potatoes, peeled and grated. 1 cup sour cream. 1 cup shredded sharp cheddar cheese. 1/4 cup grated Parmesan cheese. 2 tablespoons chopped chives. 1 teaspoon garlic powder. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture. In a large bowl, combine grated potatoes, sour cream, cheddar cheese, Parmesan cheese, chives, garlic powder, salt, and pepper. Mix until well combined. Transfer the mixture to a greased baking dish. Spread it out evenly and press down gently. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and crispy. Remove from oven and let it cool slightly before serving.
