As the son of two people who value hard work and self-sufficiency, I imagine Baldr wouldn't change much as an individual even if his circumstances did. He would still be a hunter and have a tense disposition towards the rich, spoiled folk of other highborn families.
He would also be more prone to superficial feminine expression; having grown up with a father who commonly wears make up and high heeled shoes, it would be normal to him and not exclusively for girls or high nobility. So, he would imitate to a certain degree. The heels aren't practical for hunting, but are better for horse-riding. Using the kinds of cosmetics that help protect and hide his face/hair when on long hunts, and the more decorative kind when just wandering about town. Mostly around his eyes, less so anywhere else.
Growing up in his parents' inn would give him an even closer relationship with common folk, seeing the discrepancies between both ends of the spectrum and making judgements accordingly. Baldr would spend far more time among the lower class, bringing his hunts to orphanages and places that provide for the poor. Whipping up a good meal using a boar he caught himself would make happy, especially when it means he's providing for people in need.
Even better if he gets to cook it with his parents. Both Yuri and Ingrid's influence would make him into a fantastic chef, I'd wager. The mean kind that takes his craft incredibly seriously.
