Amo la cucina etnica, molto piatti si avvicinano alla cucina mediterranea, solo con aggiunta di spezie che adoro.
Stasera ho preparato questo piatto tipico marocchino lo zaalouk, a base di melanzane e pomodoro, con l'aggiunta di paprika, cumino, peperoncino e alla fine un limone spremuto e del prezzemolo.

Zaalouk denjal (Moroccan cooked salad with eggplant)
Zaalouk (الزعلوك), meaning "purée," is used to describe several Moroccan cooked salads; this eggplant-based version is the most popular, but zaalouks of peppers, zucchini, cauliflower, and carrot also exist. Eggplants are charred, mixed with cooked tomato, garlic, parsley, and cilantro, and spiced with sweet paprika and cumin to produce this flavorful, savory dip.
