Ingredients: 1 1/2 cups all-purpose flour. 1 cup granulated sugar. 1/2 teaspoon baking soda. 1/2 teaspoon salt. Zest of 2 limes. 1 cup non-dairy milk such as almond or soy milk. 1/3 cup fresh lime juice. 1/4 cup vegetable oil. 1 teaspoon vanilla extract. 1 tablespoon apple cider vinegar.
Instructions: Preheat oven to 350F 175C. Grease and flour a loaf pan. In a large bowl, whisk together flour, sugar, baking soda, salt, and lime zest. In a separate bowl, mix non-dairy milk, lime juice, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Add apple cider vinegar and quickly mix until evenly distributed. Pour the batter into the prepared loaf pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
