Ingredients: 2 cups shredded zucchini. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/4 cup almond flour. 1 large egg. 1/2 teaspoon dried oregano. 1/2 teaspoon garlic powder. 1/4 cup low-carb marinara sauce. Pepperoni slices optional topping. Fresh basil leaves optional topping.
Instructions: Get the oven ready by heating it up to 400F 200C. Shred the zucchini into a clean kitchen towel, then squeeze out as much water as you can. Shred the zucchini and add it to a bowl with the mozzarella and Parmesan cheeses, almond flour, egg, dried oregano, and garlic powder. Mix everything together well. Put the dough on a baking sheet lined with parchment paper and shape it into small tots or balls. After the oven is hot, bake for 15 to 20 minutes, or until golden brown and crispy.
