These Quinoa Pizza Bites with Summer Vegetables are a tasty and healthy way to start the meal. They're great for parties or as a quick and easy meal because they're full of quinoa, cheese, and a mix of fresh summer vegetables.
Ingredients: 1 cup cooked quinoa. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/2 cup tomato sauce. 1/2 cup diced bell peppers assorted colors. 1/2 cup diced zucchini. 1/4 cup sliced black olives. 1/4 cup chopped fresh basil. 1/2 teaspoon dried oregano. Salt and pepper to taste. Cooking spray.
Instructions: Warm your oven up to 375F 190C and spray cooking spray into a mini muffin tin. Add the cooked quinoa, mozzarella cheese, Parmesan cheese, tomato sauce, diced bell peppers, zucchini, black olives, chopped fresh basil, dried oregano, and season with salt and pepper to taste. Mix the ingredients together in a bowl. Fill up each mini muffin cup with the quinoa mixture using a spoon and gently press down to pack it in.
