A lot of people are talking about what you are and aren't allowed to wear but I think that issue is secondary to what you are and aren't allowed to do to your body. Like "you have to wear a polo shirt and dress pants" fine as long as you're paying for the polo shirts and dress pants I now need to buy. Whatever. crack two full eggs and two yolks into a bowl and add like a cup and a half of microplaned pecorino romano, lots of fresh cracked black pepper, red pepper, and maybe a little garlic powder + thyme + cayenne + smoked paprika (nice but optional), whisk that all together. render like a good hunk (maybe 1/4-1/2 lb.) of diced thick cut bacon or guanciale in an enameled pan over medium heat, cut the heat when browned and rendered to your preference (i like it still slightly tender, you can take it to fully crispy) and deglaze that fond with a splash of white wine, stirring to get it all off the bottom. boil a pot of linguine or similar with well salted water (~ocean salinity, it's gotta be enough to season both the pasta and sauce since we only add salt during this step), cook til al dente, set a cup and a half of the pasta water aside and then drain the noodles. put em directly into the bacon pan, slowly incorporate ~half the hot pasta water into the egg and cheese, pour that mixture into the pasta + bacon pan while stirring constantly. residual heat will cook your sauce, add more pasta water to thin it out as it cools. i already put this in the replies but i keep seeing people say they struggle w carbonara or haven't made it yet and will toledo tells us that it doesn't have to be like this
