A Giraffe, a frog, a lion and a rainbow
I add a lot of fun doing the giraffe even though it was repetitive for the skin. I struggled a bit to attached the parts to the body, I think my paste was maybe to soft, but overall it hold.

So it was recently my birthday, and I was told to close my eyes and walk into the kitchen. There was a white box on the table, (it looked like the ones in cake shops), so I assumed it was a cake. (This was rather unusual as my family don’t really focus on cakes and usually get cheap ones from supermarkets. I was totally not prepared for what I saw when I opened it!
This is the best cake I have ever had my whole life…

Step 3 : Decorating
First I covered the cake with white sugarpaste.
I did less photos afterward I was way too focused.
I then put another layer of white where I wanted to let it white and added the grays on the one on top . I tear up the dark grey to make some kind of texture. I did the black with my finger to an uneven tone.
I then added the orange and brown. I did the eyes with a white dot because it’s always cute.
Then muzzle and paws…
I did the ears with some pink and either gray or brown on top, glue it with water. Edible pen for whiskers and that’s it :)
Step 2 : Carving
First I've start defrosting my cake at room temperature and start piling up the pieces together.
I used chocolate ganache to glue to part together.
I covered the cake with Chocolate Ganache to fill the holes and smooth the bumps (previous mistake). Next Step : Decorating :)
Step 1 : Baking, stenciling and preparing
As this project was in 3D I had to have a precise idea of the amount of cake I had to do. I calculated where will I cut or add a big piece, and I actually I did it all with a 8" square tin.
Starting from scratch it wasn't easy and I had to have many tests ( to find the perfect stencil).The final result look like that :
I've previously baked the cake and frozen it (it was advised for carving).
I was afraid that it will alter the taste or dry my cake but it really didn't!
I used the Chocolate Fudge Cake Recipe from Lindy Smith's Blog and Book. The cake looked like it just exploded. I let it cool down and cut it in half.
This is the cake just out of the oven, Can you imagine the hamsters yet?.
The night before I decorate I prepared my colours, as I use only white sugarpaste (fondant) I had to do every colours that I wanted to use then I've added some gum tragacanth to correct the texture of adding too much colour (See : I'm learning from previous mistakes).
Because once I start I can't stop, I've decided that I could do snowmans...I didn't have any modelling paste so I used sugarpaste instead. I tried to do a broom but the paste couldn't hold even with a toothpick so I've decided not to do it.
I used a toothpick to hold the carrot and the eyes and button are made with edible pen.
Christmas' Hamsters
All my cakes have a story but this one is the most complex to explain so I will skip the complicated part and the "Why did I do two hamsters fucking?".
Let's just say that I had to do it, and because it was Christmas I did a christmas hat, a snowman and a snowwoman :)
Step 3 : Correcting Mistakes
I woke up decided to make this cake look good.
I removed Rosie's royal icing letter and put a white layer on the center of the cake which looked like a cushion.
I also did 2 more roses of each color to complete the circle (as it wasn't a croissant after all, it just looked unfinished).
For the writing, it was just a nightmare as I used almost all my red food coloring and it was difficult to do the exact same colour.
I watched several videos on youtube to learn how to do the two-tones colour. I've decided to use this techniques, chose my nozzle, did many tests and finally finish this cake and TADA!
Step 2 : Decorating the cake with Roses and a Bow
First I did a black ruban with sugarpaste.
My first idea was to alternate red and black roses : do 2 big and 2 smaller from each color and position them in a croissant form and write Rosie in the middle.
My 2 smaller ones were quite big and my big ones not big enough :)
I put them on the cake and it looked like that :
I followed instructions to do a beautiful bow, thanks to youtube videos.
Even if I wanted to go to sleep so bad and my feet were killing me I've decided to write "Rosie" on the cake (as planned).
I never had to write anything until this moment and as I was tired and royal icing was easier to make I've decided to write with royal icing.
BIG MISTAKE.
I went to bed after that.
Step 1 : Cover the cake and the cake board
I did a 10" round Chocolate Mud Cake with 2 insane layers of Chocolate Ganache .
Everytime I'm baking a cake it crackled and rise too much but this time the cake almost blew up. I had to fix it up.
I wanted a more smooth aspect for this cake (try to avoid holes and bumps) and I saw a video where the baker cover the all cake with chocolate ganache to have a smoother aspect.
While the cake was cooling down I've done a red and hot sugarpaste and covered my cakeboard with it. I use vodka and a brush to remove sugar stains.
Back to the cake : It was easy for once to put the sugarpaste on the cake (without adding color no problem of consistency)
Rosie's Birthday Cake
For this project I didn't have a theme but I've decided to go with a stylish cake with roses and a bow.
I chose to go with red and black to go on a white fondant cake.
