Baked Nutella Doughnuts!
No Tim Hortons in your country? No worries! You can recreate a healthier version of their Nutella doughnuts right in the comfort of your own home. Baked not fried, gluten free, no processed ingredients and packed with all the good stuff, these doughnuts are a perfect pick me up for breakfast time. Oh and did we mention they taste delicious??
Topped with chopped toasted hazelnuts and the star of the show - Nutella, these doughnuts will have you hooked in no time.
Difficulty: medium
Ingredients:
2 1/2 cups Almond flour
1/2 cup Coconut flour
4 Tablespoons Raw Sugar (or Maple Syrup)
1 teaspoon salt
1 teaspoon Nutmeg
1 teaspoon cinnamon
3.5 teaspoons Baking Powder
1/2 cup Almond milk
3 Eggs (whisked)
1/4 cup Coconut oil
1 teaspoon Vanilla Essence
Handful of chopped hazelnuts (you wont need more than a 1/4 cup)
A few spoonfuls of Nutella
Method:
Preheat oven to 180°C
Line and grease an 8 inch baking tin or brownie pan with baking paper
Place the almond flour, coconut flour, raw sugar (if you are using maple syrup combine it with the wet ingredients), salt, nutmeg, cinnamon and baking powder in a large bowl and mix well.
In a separate bowl whisk the eggs and add the almond milk and vanilla essence and mix until well combined.
Slowly add the egg mixture to the dry ingredients and gently fold until just combined.
Heat the coconut oil in the microwave until its soft and add to the mixture and mix well.
The mixture will tend to be more like dough rather than a batter, combine well and pour into prepared tin.
Bake for about 20 minutes or until a knife inserted into the mixture comes out clean.
To roast the hazelnuts place them on a baking tray and bake on 160°C for about 10-12 minutes. Take them out of the oven and let them cool completely before finely chopping.
Once the doughnuts have cooled use a small flower cookie cutter to cut out shapes (or you can cut out any shape you like!). Spread Nutella on each doughnut and sprinkle the chopped hazelnuts all around the outside edge of the flower. Finish off with a dollop of Nutella in the centre of each doughnut,go on, be generous!
Strawberry Nutella Breakfast Smoothie
There are some ingredients Nutella pairs exceptionally well with; strawberries just happen to be one of them. Combine these with bananas, almond milk and muesli and you have a delicious, healthy breakfast ready to go!
The beauty of this recipe is that you can tailor it to your hearts desire, make each layer really thick and eat it straight from a spoon. Add more milk, swirl the layers together and drink away with a straw, or add or subtract any ingredient you like. Perfect for summer mornings!

Ingredients:
White layer:
2 Medium Ripe Bananas
150ml Almond Milk
3 Tablespoons desiccated coconut
1 Teaspoon vanilla essence
Pink Layer:
1 Medium Banana
6-7 Strawberries
150ml Almond Milk
1 Tablespoon Nutella
1 Teaspoon chia seeds (optional)
Muesli and your choice of berries for serving
Method:
For each layer blend all ingredients together in a blender until well combined. If you would like to make a layered smoothie then just make sure each layer is nice and thick. If you feel the layers are a bit runny simply add more banana or strawberries to thicken it up.
Finish off with some muesli and fresh berries to serve.
Nutella and Banana Pancakes
These banana pancakes are not only soft and fluffy they are gluten free, sugar free and and super healthy! So why not start your day with these delicious pancakes, after all, breakfast is the most important meal of the day.
These pancakes are completely sugar free so if you’re looking to add some extra sweetness you can add a few teaspoons of maple syrup or honey, serve with plenty of fruit ,or our favourite option, add more Nutella :)

Ingredients:
6 Eggs
6 Tablespoons Coconut Flour
100ml Almond Milk
1 small Banana (mashed)
1 teaspoon Baking Powder
1 teaspoon Vanilla Bean Paste
Fruit and Nutella to serve
Method:
Mix all ingredients together until well combined, you can do this either in a blender or stand mixer
Place a few teaspoons of oil in a frying pan and put it on medium heat
Pour a large spoonful of the batter into the pan and allow the pancakes to cook on each side for a couple of minutes
If the pan dries up in between cooking each pancake add more oil
To serve spread each pancake with Nutella and add some strawberries, blueberries and bananas, or any fruit you like
Peanut Butter and Nutella Cheesecake
Peanut Butter and Nutella! No added sugar. No processed ingredients. A delicious healthy dessert you can indulge in. Need we say more?

Ingredients:
Crust:
1 cup chopped almonds
1 cup Nutella
2 cups Hazelnut meal
2-3 tablespoons coconut oil melted
Filling: (recipe adapted from www.thehealthyfamilyandhome.com)
2 1/2 cups cashews (soaked overnight)
1/2 cup natural Peanut Butter
1 cup milk
1/4 cup coconut oil melted
1 teaspoon vanilla essence
2 tablespoons rice malt syrup
Method:
For the crust melt the Nutella until runny
Mix all the ingredients together until a paste is formed
press the mixture into a tart tin and refrigerate to allow the crust to firm up
For the filling drain the cashews and process them in a food processor
Add all the other ingredients and process until nice and smooth
Pour over the prepared crust and either freeze for a few hours or refrigerate until the cheesecake is form
To decorate melt a few tablespoons of Nutella in the microwave and pipe over the cheesecake or drizzle with a spoon
Nutella Mousse with a Secret Healthy Ingredient!
These Nutella mousse cups are sure to be a crowd pleaser, the mousse is so soft and creamy but contains no trace of cream or any other processed ingredient. A secret healthy ingredient brings a wonderful silkiness to the mousse - can you guess what it is?

Tofu!
Yes Tofu! Silken tofu adds a wonderful silky and smooth texture to the mousse, no one will believe it contains no unhealthy, sugar laden ingredients!
Difficulty: medium
Ingredients:
For the base layer:
1 1/2 cups almond meal
7-8 tablespoons coconut oil (melted)
1 teaspoon vanilla essence
1 teaspoon rice malt syrup or maple syrup
For the mousse:
500g silken Tofu
450g Nutella
2 tablespoons milk
2 teaspoons Vanilla essence
2 tablespoons rice malt syrup or maple syrup
A handful of raspberries (optional but will add another dimension to the mousse)
Hazelnuts for decorating
Method:
For the base layer mix all the ingredients together until it forms a sandy texture
Pour about 1-2 tablespoons each of the mixture into individual serving glasses (this recipe will make 6 - 8 cups depending on the size of glass you use)
For the mousse measure out the tofu and process in a food processor until smooth
Melt the Nutella in the microwave until runny and add to the tofu, process until well combined and smooth
Add the milk, vanilla essence and rice malt syrup and process again until all combined. Chop up a few raspberries and add to the mousse
Pour the mousse equally on top of each base and refrigerate for a few hours until set. You can also place the mousse cups in the freezer for a few hours to firm up.
Add some chopped hazelnuts on top before serving and be ready to wow your guests.
2 Ingredient Nutella Brownies
No flour, no butter and no added sugar, yes only 2 ingredients! hard to believe right? These are hands down the easiest brownies you will ever make, not to mention the most soft, moist and chocolatey. Add some walnuts for added texture, finish off with some icing sugar or simply have as is - either way they taste delicious.

Ingredients:
4 large Eggs
1 cup + 3 tablespoons Nutella
Method:
Preheat oven to 180°C (160°C fan forced) and grease and line an 8 inch square pan or brownie pan with baking paper.
Using a stand mixer with a whisk attachment whisk the eggs until they triple in volume (this will take about 5 -7 minutes). If you don’t have a stand mixer you can use a hand mixer it will just take a little longer to whisk.
In a large bowl melt the Nutella in the microwave until it is runny, add in 1/3 of the egg mixture and gently mix until the egg mixture is incorporated into the Nutella. (Make sure you stir the egg mixture in very gently so you don’t lose too much air and deflate the mixture).
Add another 1/3 of the egg mixture into the Nutella and stir gently until mixed well. Repeat this with the last 1/3 of the egg mixture.
Pour the batter into your prepared pan and bake for 20 - 25 minutes or until a skewer placed into the centre comes out clean.
Allow the brownies to cool in the pan before cutting up and serving.

Nutella Peanut Butter Cups
Peanut Butter and Nutella? Yes please! Packed full of all the good stuff - no unnatural or processed ingredients yet so delicious no one will believe they are healthy! These peanut butter cups are perfect for sharing with friends.....or not
Difficulty: easy
Ingredients:
Peanut Butter bottoms:
1/4 cup cacao butter
70g all natural peanut butter
1 cup rolled oats, finely ground in the food processor
For the top:
1/4 cup Nutella
1 Tablespoon Peanut Butter
Method:
In a large bowl combine the cacao butter and Peanut Butter, add the ground oats and stir well to combine
Press about a teaspoon of the mixture into the bases of regular sized cupcake cases and refrigerate.
For the tops place the Nutella and Peanut Butter in a bowl and microwave in 10 second bursts - 10 seconds in the microwave then stir, then 10 seconds in the microwave and stir again. Keep doing this until the Nutella and Peanut Butter are melted.
Pipe or spoon the mixture over each peanut butter bottom, refrigerate for about an hour or two before inverting the cases and serving.

Nutella Fudge Tart
This is the perfect weekend dessert to impress your friends with, it’s rich, it’s chocolatey, its super fudgy without being sickly sweet and so so good. A much healthier version of a regular chocolate ganache tart that will satisfy your sweet cravings without the added guilt. Warning: this is addictive!
Ingredients:
Crust:
2 1/2 cups Almond meal
7-8 tablespoons coconut oil (melted)
1 teaspoon vanilla extract
1 teaspoon maple syrup or rice malt syrup
Filling:
2 cups cashews (soaked in water overnight)
1 1/2 cups Nutella
2-4 tablespoons almond milk (or milk of choice)
Desiccated coconut for decorating
Method:
For the crust:
Mix all ingredients together in a bowl to form a paste, place the mixture into a round tart tin and press the mixture into the tin using your fingers or a spoon.
Refrigerate for an hour or so to allow the mixture to firm up
For the filling:
Drain the cashews and process them in a blender, add the milk and process until smooth (if you feel the paste is too thick add more milk to get a smoother paste).
Add the Nutella to the paste and process until smooth. Note: this recipe makes a very fudgy tart - if you want something a bit lighter add more milk.
Place the mixture on top of the crust and place in the freezer for a few hours - take the tart out of the freezer and refrigerate for an hour before serving. Sprinkle some coconut on top to decorate.
Nutella Truffles
These truffles are incredibly simple to make, taste delicious and contain no added sugar or processed ingredients. Perfect for a quick snack or easy dessert if you are a Nutella lover you must try these!
Difficulty: Easy
Ingredients:
1 1/2 cups hazelnut meal
1/4 cup desiccated coconut + extra for rolling
1/2 cup + 2 tablespoons Nutella
1/2 cup chopped walnuts
Method:
Roughly chop walnuts
Mix the hazelnut meal, coconut and chopped walnuts in a large bowl until well combined.
Melt the Nutella in the microwave for a few seconds and add a few tablespoons of the Nutella at a time to the mixture mixing well each time.
Keep adding the Nutella a little at a time until a paste forms, by adding the Nutella a little at a time you can control the texture according to your preference. If the mixture is too dry - add a few more tablespoons of Nutella. If the mixture is too sticky - add more hazelnut meal.
Once the Nutella is mixed through, roll into small balls and refrigerate until firm. Place some coconut onto a tray and roll each truffle in the coconut before serving.
Who doesn’t love Nutella? Who doesn’t want to indulge in Nutella all the time? While we accept Nutella already contains a fair amount of sugar we do not accept that you cannot enjoy this treat from time to time. All the ingredients used in our recipes are healthy; free from refined sugar, low in carbs and free from highly processed ‘empty calorie’ ingredients such as white flour and butter. In fact Nutella is the only source of sugar in our recipes so you can indulge in your favourite Nutella desserts and snacks without the added guilt!
