Homemade pizza 😋We never would have really bothered making pizzas from scratch in the past, unless we REALLY committed to the idea!! I love pizza, always have done but it’s VERY difficult to come across a vegan version! Homemade vegan mozzarella made from cashews & psyllium husks, ‘Veganella’ as it’s called on cookidoo, works WONDERFULLY melted on this tasty popular Italian dish! The dough took 2 minutes to make. Tomato sauce, 18 seconds.. Cook time 15-20 minutes.. Vegan courgette & cocoa cake, anyone?! Well I never...! Cake & courgette 100% works! Result = Moist & gooey goodness! This vegetarian recipe was so easy to make vegan friendly! TIP FOR FELLOW VEGANS.... Any baking recipe calling for an egg, replace with a Chia egg! 1 egg = 1TBSP Chia seeds and 3 TBSP of luke warm water. I’m cold today! So I quickly wizzed up this spicy cauliflower soup for lunch. OF COURSE you homemake your curry powder from scratch at the start of the recipe....! It’s in the Thermomix after all..! 😂😂😂😂😂 I didn’t have all of the whole spices in, I had mostly ground but what a punch of flavour it has...! PHWOAR...! Toast spices for 8 minutes before grinding. Add 2 tsp to your soup with cauliflower & a handful of cashews. The best veggie curry I’ve made to date! Vegetable Makhani! ABSOLUTELY DIVINE! I simply omitted the paneer cheese to make this a vegan dish & added more veg! Fresh ginger, ALOT of garlic, passatta, cumin, coriander, chilli, turmeric, coconut, homemade cashew cream, cauliflower, butternut squash & fresh spinach gave this curry lots of creaminess, flavour, bite and a healthy kick! With homemade wholemeal naans, homemade kimchi (a refreshing Indian salad made with cucumber, onions & tomatoes) & homemade mango chutney I’ll be sure to make this again! Much better quality & a lot quicker to make than ordering a takeaway curry and as good as you’d get in an Indian restaurant... Many of you have been asking for the vegan parmesan recipe I keep making. Apologies for my delay in posting! It’s truly wonderful sprinkled on any dish to give it that oomph! Or simply that cheesiness you might want or even miss! This vegan version is ridiculously healthy, packed with B12 & other B vitamins. This is now a go to basic cupboard essential for me, giving all my dishes a beautiful & nutty accompaniment! Recipe: 100g Blanched Almonds 100g Cashews 1 TBSP Nutritional Yeast/Brewers Yeast 1 tsp garlic powder 1 tsp sea salt Method: Place all ingredients into your mixing bowl.15 seconds on speed 5!
