These snack bars are a perfect protein boost after a work out or simply delicious as a sweet treat in a lunch box. Easy to make and packed with goodness.
Amaranth is a grain similar to quinoa and is a high-quality plant-based protein source. It does not only boast two essential amino acids, lysine and methionine but is also high in iron, calcium and fiber. It is easily digestible and completely gluten-free.
The pumpkin seeds are also packed with iron, protein and fibre and are full of vitamin e, minerals and various antioxidants. An absolute must for the post-work out treat. Warm Healing Ginger, Beetroot, Lime, Apple and Orange Detox Smoothie
So here's why this juice will get you through the winter like nothing else!
Firstly the beetroot:
This magical little root vegetable has been used since Roman times as a cure for fevers, skin problems, constipation and even as an aphrodisiac. Beetroot is crammed with a ton of minerals including magnesium, phosphorus, sodium, potassium, iron and calcium. Adding to that there's plenty of vitamin a, b6, c and folic acid. The betacyanin that gives this root vegetable it's beautiful deep colour also has powerful antioxidant properties. Research has suggested beetroot can help reduce blood pressure, reduce the risk of osteoporosis, slow progression of dementia, stabilise blood sugar, treat anaemia and fatigue and lower cholesterol. In short it's a pretty good vegetable to have in your juice. Almost forgot, there's also a nice bit of protein to be found in the beetroot.
Here's what research says the humble apple can do:
Boost the immune system, detoxify the liver, avoid alzheimer's, protect against parkinson's, reduce risk of pancreatic cancer, reduce risk of diabetes, lower cholesterol, prevent gallstones, neutralize irritable bowl syndrome and control weight. Apples are rich in vitamin a, c, b6, magnesium, calcium and iron.
Moving on to the fennel:
Fennel is an excellent addition to any juice or salad, adding dietary fibre, vitamin c, potassium and manganese. It's a great veg to keep a healthy heart, strong bones and good digestive and neurological health. "Shape" Magazine names it one of the top foods for weight loss but more importantly it'll give you a massive health boost.
Rammed with vitamin c lime has a long list of benefits: A big one being skin care. Research says lime rejuvenates skin, protects it from infections and reduces body odour. Additionally it can help prevent diabetes, heart disease, peptic ulcer, respiratory disorder, arthritis, fever and urinary disorders. It's great for weight loss and helps with digestion. It's a must add to your smoothies and juices. And the ginger: Ginger helps your body absorb and assimilate essential nutrients, aids digestion and makes your tummy feel nice. So that's why when I don't fancy my usual cold smoothie in the morning I whip one of these comforting juices up. HEALTHY VEGAN GREEN BEAN, MANGETOUT, CARROT, POTATO & COCONUT CURRY WITH FRESH SPINACH

Hearty Vegan Bean No-Meat Loaf with BBQ Sauce Glazing
This bean loaf is dangerous. It's so delicious it's hard to stop eating. Even the cold leftovers are hard to resist. It's a winner, especially when it's freezing outside. It will healthily satisfy those cravings for stodgy food, all the time being cruelty-free and gluten-free (if you use gluten-free oats). HEALTHY, VEGAN, GLUTEN-FREE, ALMOND & HAZELNUT GERMAN "VANILLEKIPFERL" CHRISTMAS COOKIES
These cookies are inspired by my childhood in the Black Forrest. The original recipe is not exactly what I could describe as healthy, so I was on a mission to recreate the taste and texture without the heavy load of dairy, sugar and gluten. They are very easy to make, healthy and perfect for the season. If you want to be extra naughty you could dip these beauties in some melted dark chocolate. It's divine.

GLUTEN-FREE, HEALTHY CREAMY VEGAN FENNEL & AUBERGINE PIE WITH POTATO CRUST
This gluten-free and healthy pie is such a treat. It’s not the fastest dish in the world, as it takes just about under two hours to cook but once the main prep is done, very little work is required. It’s a stick-it-in-the-oven-and-let-it-do-its-thing kind of dish.

VEGAN WINTER WARMER LENTIL, TURNIP, CELERY, CARROT, MUSHROOM STEW RECIPE
It’s getting pretty cold in Scotland and I am relying on hearty comfort food to keep me going. This delicious stew is based on a recipe by Nigel Slater. This is really a very simple and easy recipe, that requires minimal effort for maximum deliciousness. I hope you enjoy it as much as I do.
If you would like to replicate this wonderful winter dish you will need the following:
2 onions
1 turnip
(optional extra: 4 medium potatoes)
4 carrots
3 stalks of celery
2 finely chopped garlic cloves
2 cups of roughly chopped mushrooms
300g green lentils
1 1/2 litres of veg stock
2 bay leafs
1 tsp dried rosemary
4 tsp dried thyme
salt and pepper to taste
Start off by roughly chopping the onions, carrots, turnip and celery stalks and throwing them in a big pot with some olive oil. Let these veggies brown for about 5-10 minutes then add the chopped mushrooms and garlic till also slightly fried.
Now add the veg stock, lentils and herbs. Let it come to the boil, then stick a lid on it and turn down the heat. Let it simmer for about 40 minutes. Add salt and pepper to taste and that’s all you have to do. Done. Garnish with some fresh parsley if you fancy it.
(For extra loveliness you can fry up some tomatoes and pop them on top. It’s a great combination.)

Packed with spelt, dates, oats, plums and bananas. As spelt is an ancient grain it offers a broader spectrum of nutrients than it's modern wheat counterpart. I am obsessed with Masterchef. I know it’s not vegan food but I just love watching food being made and being inspired. In a recent episode they made a dish so close to being vegan I couldn’t resist. So here it goes, a veganized version of this recipe from the BBC. Perfect for dinner parties. If you feel like you’ll be running out of time when the guests are there, you can prep a large portion of this recipe in advance. Such as the oil, tapenade and chutney. INDULGENT BUT SUPER HEALTHY CHOCOLATE PUDDING [VEGAN]
This recipe is so easy to make. It’s a great treat for dinner parties or just for indulging on the sofa. For the base of this delicious sugar-free, gluten-free and dairy-free dessert you need only three ingredients.
The reason this is so wonderful for you lies with all three of the the ingredients...
Bananas are known for their high potassium content, with over 400 mg potassium in a single medium-size banana. Additionally one banana provides about 15 percent of your daily recommended amount of vitamin c. Since b vitamins are more commonly found in animal products, it may come as a surprise that bananas are an excellent source of vitamin b6. One banana supplies 35 percent of your daily b6 requirement. A large study by the Internal Journal of Cancer illustrates that the probability of developing kidney cancer is greatly lessened by frequent consumption of fruits and vegetables, though especially bananas. Very nice. Additionally the avocados are packed with fibre, vitamin k, folate, vitamin b5, potassium and vitamin b6. Although they have a high fat content it is important to note they are very unusually healthy fats, such as phytosterols, oleic acid and polyhydroxylated fatty alcohols (PFA). These fats have important anti-inflammatory properties and help the digestive track absorb other vitamins at a much better rate. Researchers at Nutrition ImpactNational determined from the Health and Nutrition Examination Study (NHANES 2001-2006) that avocado consumers were lower in weight and lower in body mass index than non-consumers. This doesn't necessarily mean it's down to the humble avocado, but it's likely it plays a part in a well balanced healthy diet.
Last but not least the cacao powder, giving you a nice addition of protein, fat, carbohydrates, fiber, iron, zinc, copper, calcium and magnesium. It also contains lipid anandamide, which is known as the "chocolate amphetamine". It can help lift your mood and even decrease depression.

HEALTHY PROTEIN PACKED VEGAN BLACK QUINOA, BEAN & MUSHROOM BURGER RECIPE
This easy burger is full of plant-based goodness. Especially the black quinoa is packed with iron and incredibly rich in essential amino acids and vitamins A, B2 and E. Additionally it is an excellent gluten free alternative to other grains. The beans are rammed with protein and keep you fuller for longer thanks to their low glycemic index.
