New recipe for layered nut and fruit breakfast with cashew cream. 100g (1cup) walnuts 100g (2/3 cup) almonds 50g (1/3 cup) pumpkin seeds 50g (1/3 cup) sunflower seeds 50g (1/3 cup) flax seeds, 1 lrg punnet raspberries/blueberries (any fruit to your liking, I used raspberries and peaches. Soak the nuts and seeds in water for 30mins - 1 hour, pulse briefly till coarsely chopped for crunchy texture For the Cashew cream, 100g (2/3 cup) cashews 60-125ml (1/4-1/2 cup) water 1tsp vanilla extract. Soak the cashews for an hour then drain, add to processor and blend (adding the water gradually till creamy texture), don't forget the vanilla for extra flavour!
