TOFU & KALE SPICY RAMEN
As I mentioned in prior blog posts, I love kale! The taste and texture is wonderful. Kale has more nutritional value than spinach so I often replace spinach with kale in my recipes. I find it holds up well in a myriad of dishes too. I like to add silken tofu to my noodle soups whenever I can because it’s easy protein yet tastes amazing! The tofu has a delicious soy bean flavor and practically melts in your mouth. Perfect for me. Yum!
It’s a shame someone doesn’t deserve any of my special vegan meals!

VEGAN SPAGHETTI NAPOLITAN
This is another one of the top 5 best dishes I make! I fell for this dish the first time I made it. This sounds like an Italian dish, however, spaghetti napolitan is Japanese style spaghetti using ketchup. It sounds strange but it tastes amazing! The authentic version of spaghetti napolitan uses meat (sausages, hot dogs or ham) and parmesan cheese.
This is the first time I cooked with red pepper! I never liked red pepper in the past but after making this dish, I like it a lot. :) Good thing I eat red peppers now because they are high in vitamin C, help prevent anemia, good for the eyes, packed with antioxidants, increase metabolism and more!
Sliced onion, fresh garlic, chestnut mushrooms, meatfree meatballs, 1/2 vegetable cube, olive oil, 1/2 red pepper, tomato ketchup, Italian passata sauce, little s&p, whole wheat spaghetti and nooch!
It’s a shame when someone loses the best thing they ever had.

Doughnut Time Revisited
I love this place. Their vegan donuts are huge! Deliciously thick and dense too. I eat them with a knife and fork! LOL. The Ess-a-bagel (my favorite bagel shop in NYC) of donuts in my opinion. The donuts are on the pricier side because they’re an artisan product made by hand. I think vegan donuts are worth every red cent! :)
SIA LATER, red velvet doughnut with vegan butter cream frosting and freeze-dried raspberries!
The red velvet flavor is typically my favorite. My only complaint is the frosting is too sweet. :( The donut itself is scrumptious! The raspberry topping cuts some of the sweetness. I like the chocolate fudge one I had last time better though. I may try a different flavor next time. :)

CAULIFLOWER AND VERMICELLI VEGETABLE DUMPLINGS IN SOUP
So I have half a cauliflower to use up and I was in the mood for some vegetable dumplings instead of noodles to go with the cauliflower. Yes, a rare thing I know! I’m always obsessed with noodles. What to do? Make a vegetable soup!
Waste not, want not! I use the whole cauliflower including the outer leaves for extra fiber. It’s very tasty! I love it. A few of the delicate dumplings broke apart during cooking and the contents infused my vegetable broth with extra flavor! My cauliflower and dumpling soup turned out amazing! It’s too bad I will never make this delicious soup for someone in particular.
Smashed garlic, sliced ginger, cauliflower (with leaves), vegetable dumplings, dash of salt and vegetable broth. Oil free. Yum!
