When somebody asks “How do I refer to a non binary person formally instead of sir or ma’am” and you answer “do not refer to me” that doesn’t answer their question actually
If you want the real answer it depends on the situation.
Instead of writing in a letter “dear sir or madame” you may write “to whom it may concern”
If you’re referring to a crowd saying “folks” or “honored guests” or “good people” or “hey kids” might all work depending on the situation.
When referring to a specific person it depends on their preference. They might have a doctorate or have some other title. In that case the choice is obvious. If not, Mx (pronounced like the word mix) is an option that exists and sort of widely used but it’s so new that even a non binary person might not know about it or might not like it. Using their full name might also be a way to show respect. “Our honored guest” or something like it also may be applicable in some very specific situations. In other situations just calling someone by their last name might be enough of a sign of respect like for a teacher or something.
A non binary person might just also be okay being called sir or ma’am depending on their preferences. I personally am okay with either mx or sir for example.
