Kidney Bean & Sweet Corn Salad
Originally from “Another Dinner Is Possible”, published through AK press this is a great salad recipe for a quick meal with protein. I added a balsamic glaze when I first tried this recipe and the glaze mixed so well with the sweetness of the corn and the kidney beans. The recipe is for 3-4 people, you can cut down on the beans and sweet corn to make it a single or double serving. This is a great salad to chase away the winter blues or celebrate the summer sun.
Kidney Bean & Sweet Corn Salad
“1 x 400g tin of kidney beans
1 x 300g tin of sweet corn
1 green pepper
1 small onion
90-100ml vinaigrette
Your preferred mix of salad greens
1). Drain and rinse well both the tins, de-seed and finely chop the pepper, peal and finely chop the onion.
2). Mix this all together in a bowl with the vinaigrette. If you like spicy things , add a dash of tabasco or a fresh chili.”
