Spinach salad with raw zucchini, raw beets, tomatoes, peppers, mixed nuts, and balsamic vinaigrette.
Avocado, sautéed mushrooms and tomatoes, and lettuce. One delicious sandwich. #plantbased
This is #truth and why I stress it to people to give their body time to heal, renew, and rebuild. #herbaltea #naturesmedicine
This is what I do in the kitchen sometimes. When the food is boiling, sizzling, or whatever I do some exercises. Get it in when you can. #kitchenworkout #fitmom #fitfam

Of course I didn’t eat this alone. After having their breakfast, they sat right next to me to eat mine. LOL So far, I have been down to eating eggs about 1-2 times a week. I’m learning more about plantbased protein. Little by little.
Every transition takes time and patience. Never rush things and keep realistic goals.

Dinner served. I'm getting used to preparing our dinners like this. My kids occasionally still eat chicken. Me, I only consume eggs now. It has been stepping stones for me, but I'm happy at my progress. It was definitely easier for me since I already did not eat pork or beef. #plantbased #dinner
I have been working out for six months building muscle. I dropped a lot of weight just by eating healthier and doing the minimal in fitness. Now, the game is on. There's not turning back. My kids and I are eating a little something before heading out. The kids had yogurt, pears, and a peanut butter and jelly tortilla wrap. #kids #smallmeals #kidsmealtime #nutrition #foodie
I was going to make a salad, but I decided just to throw it all in a blender so that I wouldn't have much to clean afterwards. Lol Ingredients: Handful blueberries 1 kiwi 1 banana 1/2 portobello mushroom Handful kale 1 T nut butter Nitro Xtreme Almond milk Ice Blend well. Portobello mushrooms are high in fiber, potassium, b vitamins, and contain protein. They can also contain vitamin D. "mushrooms are the only one containing selenium, a compound necessary for the proper function of the thyroid and male reproductive systems. It’s an antioxidant that protects the cells from damage from heart disease, certain cancers, and age-related diseases." Mercola
The best biscuits I have made by far! They are #vegan too! 2 cups all-purpose flour, plus more for dusting 2 tablespoons baking powder 1 teaspoon salt 5 tablespoons cold, unsalted vegan butter 1 cup almond milk Process Sift flour and baking powder into a mixing bowl Add salt and mix Cut butter into flour until it is sand like, small chunks are ok Dig a hole in the middle and begin pouring the almond milk. Mix together until a dough forms. If it becomes too sticky, add a little more flour and mix. Place dough on floured surface. Begin flattening out the dough to about 1 inch thick. Cut round shapes into the dough with a cup or biscuit cutter. Repeat until you've used up all of your dough. Place biscuits onto a cookie sheet. You can rub some melted butter on each one. Preheat oven at 425. Bake for 10-15 minutes. Enjoy! Notes: I mixed by hand with a tablespoon. Try not to over mix.
