Christmas is always a food Odyssey at our place. This year I’m particularly happy with the summer dessert - Champagne infused black chia pudding with creme anglaise (custard) dressed with raspberry & honey (from our bees!) coulis, pecans, sunflower seeds and pepitas. We used the last of the Hobart No4 for our lunch Negronis and they were perfect with the orange-based glaze on the ham.
